Kerr for Time Graham Hill's Weekday Vegetarian concept is controversial among some of our readers, who don't think people should eat meat at all. But Time Magazine says that only 2.5% of Americans are strict vegetarians or vegans, and Graham's idea is that any cutback in meat consumption is good for the environment. Not everyone has the discipline to go, dare I say, whole hog; according to Vegetarian Times, a full 10% of Americans follow a "vegetarian-inclined" diet. But the most surprising
We were given a ton of sweet potatoes from some generous friends who were growing them, and so I was trying to find good sweet potato recipes ... Anyways, I made this, and I significantly deviated from the original recipe, and I wanted to document what I did so I could make it again ... This seems sort of like a winter recipe except the fresh basil - which can't be left out, this makes dish - makes it ok for summer (at least to me). -- posted by larchie ...
Photo: Kelly Rossiter This is the time of the year I always look forward to. I love it when dinner can consist of nothing more than a couple of ears of corn, a plate of sliced tomatoes and a green salad. There's nothing easier to make, and it's a totally satisfying simple supper. This week is going to be a celebration of corn at the Weekday Vegetarian, but I had to start with my favourite way to eat it, straight off the cob ...

A recipe my family grew up on that our mom made, simply ingredients and cooking. Great as a meal with sliced tomatoes or a side dish. **My mom would also slice bell peppers in half, remove seeds and rub a bit of oil on outside then mound this eggplant dressing inside, place stuffed bell pepper in 9 x 13 dish with a just enough water to cover bottom and bake at 350 for 25-30 minutes to be served as a side dish. ***You can also just cook your eggplant down with the seasonings S,P Garlic Powder,
I had been wanting to make a raw treat for my sister, so we decided to make banana pudding yesterday ... We just topped ours with leftover raw graham cracker crust crumbs but now that I think about it, it would probably be great with raw chocolate ganache, nibs, berries, or even more sliced bananas! :) For more recipes like this, including raw vegan graham cracker crust, visit www.bellaraw.blogspot.com. -- posted by happybella ...
This is a wonderful pie recipe to use up all of those yummy and sweet summer peaches ... To make peeling easier dip peaches in boiling water for 30 seconds then plunge into sink or bowl of ice water ... Once cool, you will be able to just rub the skin off (this will only work on ripe peaches) ... If you top this with a big scoop of vanilla ice cream it will be heavenly. -- posted by Luby Luby Luby ...
