From EatingWell July/August 1995: "Packed with dried cranberries and low-fat granola, these firm bars are excellent travelers, full of complex carbohydrates, vitamins and trace minerals." I haven't tried these yet, but they're on my list of things to make. We use a granola full of sunflower seeds, pepitas, almonds, flax seed and pecans -- so the additional seeds and nuts would add to the fiber content (well, and the fat too). This is a refresh of a Wholeliving.com recipe. Martha Stewart's gang opts for low-fat buttermilk, but I never have that on hand so I trade in 2% milk or vanilla soymilk -- depending on what's in the fridge. The added wheat germ supplies some potassium and iron (it has more than any other food). To make the compote, you can use fresh or frozen blueberries
I adapted this recipe from recipe #19424 using agave nectar instead of sugars and wheat germ in place of some of the flour ... Thanks to Manda for posting original recipe. -- posted by Chef #521192 ...

Our toddler can't get enough of these and neither can we! They're moist and healthy muffins that are packed with lots of nutritious ingredients. Sometimes I top them with granola or a brown sugar streusel. They're heavy enough to fill a little one's tummy and keep them going all morning long. Tasty and low fat! -- posted by MamaGanoush ...
Guam's selection of locally-grown vegetables is limited and many of them are unfamiliar to stateside Americans ... One example is the kabocha, also known as Japanese pumpkin or kabocha squash ... The Filipinos use it in stews and the Japanese use it in tempura but I experimented to make it a healthy side dish (kabocha is full of beta carotene and also has iron and potassium ... good stuff). -- posted by Cooking_on_Guam ...
