I got the original idea for this recipe from Ina Garten of the Food Network; she made a similar jam using apples for pectin, but with much more sugar ... I incorporated some low-sugar jam recipes to come up with this one ... Delicious and relatively healthy! -- posted by ScrumptiousWY ...
Low fat and low sugar yumminess! Found in Diabetic Cooking magazine, we enjoy these not-too-sweet cake-like muffins with fresh blueberries. With just a hint of orange flavor, I think I'll add one teaspoon of orange zest next time. If you prefer a sweeter muffin, I'd suggest increasing the sugar to 1/2 cup. This recipe can make 6 jumbo muffins or 3 jumbo/ 6 regular or just 12 regular! -- posted by DuChick ...

I used low fat cream cheese and low sugar raspberry preserves ... Be sure to adjust the chipotle pepper to your taste ... I would begin by adding about 1/4 of a pepper and continue to add for the heat you like. Servings is a guess because I think I could eat the whole

I pulled this recipe off the net in 2003 when I was initially started low carbing ... It has since become my go to recipe for something that will always add that sweet crunch that will keep me on the straight and narrow ... If you are really watching your carbs, vanilla, pure or imitation, does have sugar in it ... You need to look for the sugar free variety which can get quite expensive ... I find they make great toppings for a low sugar ice cream dessert. -- posted by Fireflylover ...
